Recipe: Sheet pan Quesadillas

Hispanic food is some of my favorite foods to make and eat. It can be so simple, quick and easy- just like this recipe I have perfected over the last few months. I originally got the idea from another sheet pan quesadilla recipe, but I have tweaked it to fit my family’s needs.

 

Ingredients

1 can black beans

1 can sweet  corn

1 bag of shredded cheese

2 pounds of ground beef (seasoned)

14 burrito sized tortillas

1/4 cup melted butter

Cooking Directions

First I spray the sheet pan with a cooking spray. Then I lay down the tortillas on the bottom layer.

I insert all the ingredients into the middle of the tortillas. Then I place two full tortillas on top, fold all of the tortillas hanging over the sides onto the top and fold the side tortillas in. With the melted butter I brush it on top of the tortillas.

When it comes out of the 350* oven after baking for 20 minutes, I cut it into squares.

As you can see it makes a great harvest/planting meal. I try to use the corner pieces with only one open side for those meals. I put in a container of salsa and a container of sour cream to dip it in so it can be hand held. You can also eat with a fork as seen in the picture.

 

This recipe is approved by my two and four year old kids! It has become a family staple in the house. Change the inside ingredients to create a Chicken, Bacon, Ranch meal too!
