Farm Fresh Egg Bites Recipe

If there’s one food that I absolutely love, it’s eggs. There are so many ways that you can prepare them for any meal. You really can’t go wrong. They’re one of the easiest things to make, and this recipe is no exception!

I despise when blog posts don’t give you the recipe right away and you have to scroll for 7 hours to get it. So, here’s the recipe and then I will give a little background on the eggs below it!

Recipe

11-12 eggs

1 lb ground sausage

1 cup shredded cheese

1 cup cut veggies (optional)

1/4 cup milk

 

All of the measurements are an approximation because I don’t really measure when I cook. I like to go by “feel”.

The thing that makes these egg bites so special is how they were made. Cassidy loves to be my helper when I am doing anything. We clean together, put on makeup together, and even cook together, but our story starts in my parents’ barn.

My parents were on a 4 day vacation and had asked Cassidy and I to pick eggs and feed and water the chickens. Cassidy has been around them since the chicks were 2 days old. She loves them dearly and enjoys doing chicken chores any chance she gets.

 

She makes sure to take care to carry the feed very carefully to each pan that they eat from. After the feed is all distributed she makes sure that they have enough water for the day. Our next stop after the water is in the little nests that the chickens lay in. She gets so excited each time and exclaims “I FOUND ONE MOMMY!”

Farm fresh eggs really are the best. They taste better and have better color. You always know they’re fresh too, if you pick them yourselves after the hen lays it!

The best part about this whole project is sharing responsibility and teaching Cassidy it is important to care for the animals that provide for our food. We feed ourselves when we get hungry and we drink when we’re thirsty. The animals all need to be taken care of properly in order to provide us more food. We need to be sheltered from the weather, and the animals need to be sheltered from the weather. They need fresh straw and shelter from the wind. It is extremely important to treat them well and I am proud to teach my children that.

After we washed the shells off and drove the short distance to our house from my parents’ we started on our cooking project. We gathered all of our ingredients and Cassidy had grabbed her stool so that she could assist me.

 

My helper starts out by cracking 11-12 eggs into a bowl.

Then we add in the milk and whisk until they are mixed together and fluffy!

 

 

 

 

Then we add cheese to the ground sausage that is already browned and put into the muffin tins.

 

 

 

 

After the cheese is put on ( and veggies or whatever else you want) you can go ahead and pour over the milk and egg mixture.

After baking in the oven at 350 degrees for 30 minutes, take out and enjoy!

I love being so close to agriculture and keeping my children involved in how they play a role in the food chain. It is important to educate our children where our food comes from.
