Recipe: Rib Steak, Sweet Potato Mash and Green Beans

Here’s another yummy, easy recipe from my new favorite app Mealime! I cannot believe how quick and easy these recipes are. Anthony is loving all the new things I’m making, plus it’s kind of healthy! BONUS!

 You don’t need a lot for this recipe. You need a small sauce pan and one frying pan.

For ingredients you need:

3/4 lb. sweet potato

1/2 lb. green beans

3/4 lb. steak (the recipe calls for ribeye but you can use any steak)

1 clove garlic

1/2 tsp salt

1/4 tsp black pepper

1/2 tbsp virgin coconut oil

1 tbsp butter, unsalted

Directions

 First I started out washing the fresh produce. You don’t know who/what touched them in the store. Next, I peeled and cut the sweet potatoes into 1-inch cubes and put into the small sauce pan.

Add water to the saucepan and bring to a boil while covered. Cook until the potatoes are tender when pierced with a fork. It should take about 8-10 minutes.

While the potatoes are cooking, trim and discard the ends of the green beans and put them into a medium bowl.

After that is done peel and mine (or press) the clove of garlic.

Now start warming the skillet and add the 1/2 tbsp of coconut oil to the bottom so that it is coated with the oil. 

While the pan is warming, pat the steak dry with paper towels and place on a plate. Season generously with salt and pepper on both sides.

Carefully place the steak into the pan and flip every 15 to 30 seconds until your desired doneness. I like mine medium-rare so it only had to cook about 7 minutes.

After the steak has finished cooking and been taken out and put on a plate, put the green beans into the skillet with salt and pepper (1/4 tsp salt, 1/8 tsp pepper). Cook until they are bring green and tender-crisp, which takes about 3-4 minutes. 

After the potatoes are cooked, drain most of the water from them. Then add the butter, garlic, salt and pepper (1/4 tsp salt and 1/8 tsp pepper) and 1/4th cup water to the sauce pan.

Mash the mixture with a potato masher until smooth.

Then serve!

This has been one of my favorite meals so far. The flavors all mesh so well together AND my husband (who hates veggies) loves it!
