Lemon Garlic Chicken Drummies

I have to make a disclaimer right off the bat to you guys. I strongly dislike cooking. I don’t like to take the time to figure out ingredients, put them together and bake/cook/grill, etc. I want to be able to heat up the oven, throw it on a pan and cook for 15 minutes and eat. (Yes, I am referring to Jacks pizza). I have about 4 jobs and I don’t want to take the time away from those jobs to cook.

Anyway, you all asked for recipes so I set out to find easy and quick recipes that are healthy. It’s the beginning of 2019 and I’m still on the health-kick. šŸ˜‰ Guys, I foundĀ the bestĀ recipe! It’s so stinking good, easy to make, and really quick (as long as the chicken is already defrosted).

First, I gathered the ingredients of garlic (3 cloves), corn, zucchini squash (2), one lemon, 1/2 small bunch of Italian parsley, olive oil, salt, black pepper, chicken drumsticks, and feta cheese.Ā 

I started out by pre-heating the oven to 500 degrees F.Ā 

The cooking instructions then say to peel and mince the garlic and to divide the 3 cloves of garlic between two bowls. Then I juiced the lemon, 1/2 in each bowl. Next I shaved the parsley leaves off the stems and minced the leaves. Then I divided them between the two bowls as well.

Add 1 tbsp extra virgin olive oil, 1 tsp salt, 1 tsp black pepper get split between and added to the two bowls.

Ā I added the drumsticks, per the directions, to one bowl and marinated and covered them in the mixture. Once the drumsticks were coated in the marmalade I threw them on a baking sheet and put them in the oven to bake for 20-25 minutes. Halfway through I flipped them over so they would bake evenly.

While the drumsticks were in the oven cooking, I cut three of the mini ears of corn off the cob and added the cut up zucchini to the second bowl of mixture.

I added olive oil to the skillet and put the mixture in to cook!

Ā Place half of the 4 oz. package of feta cheese to a small bowl while this is cooking on the stovetop.

Once the zucchini and corn mixture is done on the stove, I mixed in the feta cheese. You can also sprinkle the feta on top of the corn/zucchini salad.

Then, I took out the chicken drumsticks and enjoyed!!

This recipe is definitely going into the recipe box to make when Anthony gets home. He will love it and it is relatively healthy! I love a yummy, healthy, easy and fun meal.
