Fall Soup- Chicken Enchilada Recipe

Who else loves fall weather? What about making tons of soups during fall and winter?! 

In the past I have not been a fan of soups, but the last couple years since I have become the full-time cook in the house I have realized that soups can be easy, fast and most importantly, delicious. 

 I never though about making Chicken Enchilada Soup before. I’m a huge chili fan, but my friend Jen said she had a recipe that she’s been wanting to try for this fall and winter. 

We found that this recipe is super simple! It’s mostly dumping cans into a crock-pot, and cutting up a little bit of chicken and veggies. The best part is this would be a fun and easy recipe to make when you have friends coming over to watch a sporting event, or just socializing!

Ingredients

  • 3 cups chicken broth
  • 2 1/2 chicken breasts, skinless and boneless
  • 1 1/2 cup enchilada sauce
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 14.5 ounce can diced tomatoes
  • 1 15 ounce can black beans
  • 1 15.25 ounce can whole kernel corn
  • 1 7 ounce can diced green chiles
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 8 ounces shredded cheddar cheese

Directions

1. Add all of the ingredients to the crockpot, except for the shredded cheese.

2. Cook over low heat for 8 hours.

3. Add in the cheese (and in our case tortilla chips) to taste!

4. Enjoy!

Notes

I decided to cut up the chicken a little bit before throwing it into the crockpot because I felt that it would take on the flavors floating around in the crock pot better. 

Jen and I only ended up cutting each breast into about 6 pieces each and throwing them in. We shredded the chicken up a little more after it had been cooked.

I am a super messy cook, which is one of the reasons I dislike cooking. I hate cleaning up the huge mess I make. The best part about the meal prepping I do is that I only make the mess once a week!

I decided to only use a quarter of the onion. I am not a huge fan of onion, and neither is Jen, so we made it to how we like it! I can tell you Anthony was very thankful for that. (He hates all veggies no matter what haha!!)

So is everyone ready for a picture of the final product?! I know that waiting those 8 hours to see the end result was extremely hard for me! 

We added the tortilla chips and sour cream for fun! I can tell you that I absolutely love sour cream on things like this!
